Recipes - an introduction.

Recipes play a central role within Mise-en-place; they are the starting point for any caterer's planning.

At its most fundamental, a recipe is simply a combination of ingredients in specific quantities, combined in a certain way, prepared and presented according to a well defined method.

If you have followed through the "Mise-en-place / Quick start - basic skills" section of this tutorial you will already know a lot about creating and entering the details of a recipe. If you haven't done this and you are a little unclear about how a recipe is defined, it is recommended that you turn to that page and walk through the process. It is really easy!

On the main "Recipes" page (click on the Recipes / Open/New option) you can access all of the recipes that are available to you; both those in your own cookbook and those in the Set cookbook. You can switch between the ones that you see by clicking on the small "radio" buttons at the top left of that page.

Underneath those radio buttons is a list of the folders, in which your and the Set recipes are stored. There is another section of this tutorial that discusses folders in detail, so they are not covered here. Suffice to say that if you click on a folder name on the left hand side, the list of recipes within that folder is displayed on the right hand side.

You can then double-click on one of the recipes listed to "open" that recipe's details, or you can click on the "New recipe" action button to begin the process of creating a new recipe definition.

Alongside the radio buttons is a Search box. When you enter a word into this box and click Search, the system will show you a list of recipes whose name or keywords (see the topic Recipes / Recipe Header) contain that word. The search will include ALL the recipes that are available to you - your own and the recipes in the Set cookbook. This can be really useful if you are looking for a particular recipe but you are unsure where it is located in your or the Set folders.
